California Prune Board ambassadors unwrap sweet Christmas treats
California Prune Board’s ambassadors, Peter Sidwell and Stefano Collomb, have unveiled fabulously festive dishes featuring ever versatile and naturally sweet California Prunes.
Innovative chef, baker, and TV presenter Peter uses California Prunes in a range of sweet and savoury dishes influenced by international flavours and seasonal produce. For the forthcoming holiday season, he’s whisked up a decadent Clementine and California Prune upside down cake.
“California Prunes are a deliciously versatile ingredient that pair well with a range of other ingredients,” explains Peter. “This year, I wanted to get back to basics with a nostalgic bake, switching out more frequently used pineapple for a sweet combination of prunes and clementines and a cocoa twist.”
Meanwhile Peter’s fellow California Prune Board ambassador, Stefano Collomb, has revisited another classic. The Italian-based Master Chocolatier’s ‘Panettone Duet with California Prunes’, on sale at his Valle d’Aosta store ‘Chocolat’, features two mini panettones. The first blends California Prunes with milk and white chocolate, while the second uses dark chocolate to contrast the sweetness of the prunes. Both are further enriched with pistachios and star anise.
