
Savoury California Prune Baklava
INGREDIENTS
- 1 Bunch of spring onions
- 200g Mixed nuts
- 200g Feta cheese
- 225g Hallumi cheese
- 150g California Prunes chopped
- 1 lemon
- 4 tbsp pumpkin seeds
- 270g Filo pastry
- 50g Melted butter
- 2 tbsp sesame seeds
- 1/2tsp dried chilli flakes
- 2 tbsp Honey
DIRECTIONS
- Chop the spring onions and place in a mixing bowl.
- Scatter in the nuts and seeds, then add the chopped California Prunes
- Grate the hallumi straight into the bowl and crumble in the feta cheese
- Cut the lemon in half and squeeze into the bowl before stirring together.
- Trim the filo pastry to fit your oven proof dish, then brush it with melted butter
- Place one sheet into the bottom of the tin, brush with melted butter and top with
another sheet - Add more and more sheets and brush with butter to make up 3 layers, then top
with 1 third of the cheese, nut and California Prunes mixture - Repeat the process with 3 more layers of filo pastry and the filling, then again once
more - Finish with the final 3 layers of the filo pastry and brush with the remaining melted
butter - Scatter with sesame seeds and chilli flakes, then drizzle with honey before baking
at 180c for 40 minutes until golden and crisp
