California Prune, Nut and Chocolate Nordic Bread (Gluten free)

This gluten free Nordic Bread is a healthy, nutritious and energy boosting recipe. The complementary mix of California Prunes, seeds and nuts make for a delicious flavour (with a crunch). Whether you’re sharing or keeping it all for yourself, this unique bread will live long in the memory.

INGREDIENTS

  • 50g flax seeds
  • 190g mixed nuts
  • 50g California Prunes (pitted whole)
  • 35g 70% Dark chocolate chunks
  • 30g ground flax seeds
  • 30g ground chia
  • 3g salt
  • 30ml oil
  • 3 large eggs
  • 35g 70% Dark chocolate chunks

DIRECTIONS

 

1. To make this bread mix all the nuts, California Prunes, seeds and chocolate together in a bowl, then add the salt.
2. Mix the oil and eggs together before pouring into the bowl with the dry ingredients and mix together.
3. Line a 2lb loaf tin with baking parchment, then spoon the mixture into the tin and spread evenly.
4. Bake at 160 °C for 20-30 minutes or until the loaf is firm to the touch.
5. Leave the loaf to cool before slicing thinly.
