Fresh and Fruity California Prunes Salad

This salad is super summery and perfect for a BBQ. Just remember – don’t make it too far in advance as it wants to be the freshest plate on the table.

Makes: 4-6Prep Time: 10 minutes

INGREDIENTS

  • 3 vine tomatoes
  • 12 cherry tomatoes
  • 1/2 honeydew melon
  • 1/2 galia melon
  • 200g feta
  • 1 handful of Greek or traditional basil
  • 150-200g California Prunes
  • 1 lemon
  • 60ml olive oil

DIRECTIONS

  1. Have a bowl ready to add each ingredient as it’s chopped.
  2. Cut the vine tomatoes into chunks, and the cherry tomatoes in half.
  3. Peel the melons and cut into bite-sized chunks.
  4. Crumble the feta.
  5. Sprinkle in the basil.
  6. Add the California Prunes.
  7. Mix all ingredients together being careful not to break up the tomatoes too much.
  8. Squeeze over the lemon juice and drizzle over the olive oil.
