California Prune Creme Brûlée

Makes: 4Prep Time: 15 minutesCook Time: 90/120 minutes

INGREDIENTS

  • 9 Free range eggs (yolk only)
  • 600ml Double cream
  • 1 tsp Vanilla extract
  • 80g White sugar
  • 100g California Prunes
  • 2-3 Pieces Candied ginger sliced
  • 1 Lime
  • 100g Sugar for the topping

DIRECTIONS

  1. Separate the eggs and place the yolks into a bowl with the sugar and vanilla
  2. Whisk together, then add the cream and stir together
  3. Place the California Prunes into the bottom of a 20cm round oven proof dish, then
    add the sliced ginger
  4. Pour over a little of the ginger syrup that comes in the jar as this will marry the
    flavours together
  5. Squeeze over the lime juice and pour the egg mixture into the dish
  6. Pre heat the oven to 100C, then place the brûlée onto an oven tray, place another
    tray on top of the brûlée before placing in the oven
  7. Cook for 90-120 minutes. The cooking time may vary as the thickness of your oven proof dish will be
    different, so either use a thermometer, the core temp should be 75c or if you are doing it by eye the centre needs to be firm and not wobbly
  8. Once cooked, leave to cool, then scatter the sugar over the top
  9. Using a blow torch, burn the sugar until it turns to a caramel and serve immediately
