
California Prune Creme Brûlée

DIRECTIONS
- Separate the eggs and place the yolks into a bowl with the sugar and vanilla
- Whisk together, then add the cream and stir together
- Place the California Prunes into the bottom of a 20cm round oven proof dish, then
add the sliced ginger - Pour over a little of the ginger syrup that comes in the jar as this will marry the
flavours together - Squeeze over the lime juice and pour the egg mixture into the dish
- Pre heat the oven to 100C, then place the brûlée onto an oven tray, place another
tray on top of the brûlée before placing in the oven - Cook for 90-120 minutes. The cooking time may vary as the thickness of your oven proof dish will be
different, so either use a thermometer, the core temp should be 75c or if you are doing it by eye the centre needs to be firm and not wobbly - Once cooked, leave to cool, then scatter the sugar over the top
- Using a blow torch, burn the sugar until it turns to a caramel and serve immediately
