Cauliflower Slaw
Lighten up your side dishes, and watch as California Prune purée brings together all the elements of this cauliflower slaw without sacrificing taste.

INGREDIENTS
- 1 head cauliflower, shredded
- 110g carrots, shredded
- 12.5g green onions, chopped
- 38g red pepper, diced
- 90g California Prunes, diced
- 3 tablespoon white balsamic vinegar
- 2 tablespoon olive oil
- 2 tablespoon California Prune purée
- salt, to taste
- pepper, to taste
- ½ teaspoon celery seed
- ½ teaspoon tarragon
DIRECTIONS
- Combine vegetables and diced California Prunes in a bowl.
- For California Prune purée: In food processor, process 227g California Prunes and 6 tablespoons hot water until puréed.
- In a separate bowl, mix vinegar, olive oil, California Prune purée, salt, pepper and spices.
- Pour over the vegetables. Mix well.
- Let marinate for about 1 hour before serving.
