Cauliflower Slaw

Lighten up your side dishes, and watch as California Prune purée brings together all the elements of this cauliflower slaw without sacrificing taste.

Makes: 8Prep Time: 20 min.Cook Time: 15 minutes + 1 hour marinating time

INGREDIENTS

  •  
  • 1 head cauliflower, shredded
  • 110g carrots, shredded
  • 12.5g  green onions, chopped
  • 38g  red pepper, diced
  • 90g  California Prunes, diced
  • 3 tablespoon white balsamic vinegar
  • 2 tablespoon olive oil
  • 2 tablespoon California Prune purée
  • salt, to taste
  • pepper, to taste
  • ½ teaspoon celery seed
  • ½ teaspoon tarragon

DIRECTIONS

  1. Combine vegetables and diced California Prunes in a bowl.
  2. For California Prune purée:  In food processor, process 227g California Prunes and 6 tablespoons hot water until puréed.
  3. In a separate bowl, mix vinegar, olive oil, California Prune purée, salt, pepper and spices.
  4. Pour over the vegetables. Mix well.
  5. Let marinate for about 1 hour before serving.
