California Prune Breakfast Oat Pudding

INGREDIENTS

  • ½ cup oats, dry
  • 1 cup water
  • ¼ cup California prunes, finely chopped
  • 1 tablespoon almond butter
  • ¼ tsp ground ginger
  • 1/8 tsp grated orange peel
  • 1/2 cup vanilla non-fat Greek yogurt
  • 1 teaspoon maple syrup
  • 1 tablespoon sliced almonds

DIRECTIONS

  1. Mix oats, water, ginger and 3 tbsp of the California Prunes together.
  2. Microwave on HIGH for 2 minutes. Remove from microwave.
  3. Stir in the almond butter, Greek yogurt, maple syrup and orange peel and blend well.
  4. Top with the remaining prunes and sliced almonds.
