
California Prune Breakfast Oat Pudding

INGREDIENTS

- ½ cup oats, dry
- 1 cup water
- ¼ cup California prunes, finely chopped
- 1 tablespoon almond butter
- ¼ tsp ground ginger
- 1/8 tsp grated orange peel
- 1/2 cup vanilla non-fat Greek yogurt
- 1 teaspoon maple syrup
- 1 tablespoon sliced almonds
DIRECTIONS
- Mix oats, water, ginger and 3 tbsp of the California Prunes together.
- Microwave on HIGH for 2 minutes. Remove from microwave.
- Stir in the almond butter, Greek yogurt, maple syrup and orange peel and blend well.
- Top with the remaining prunes and sliced almonds.
