
Pain Au California Prunes
The combination of the flaky, buttery layers of pastry and the succulent bursts of flavour from the California prunes makes for an indulgent treat that perfectly complements the spirit of the Paris Olympics. Not only it is incredibly delicious, but the nutritional benefits of California Prunes make it an ideal snack for athletes and fitness enthusiasts, providing essential vitamins, minerals, and high fibre content.
INGREDIENTS
- 500g Strong Bread flour
- 10g Dried yeast
- 20g Sugar
- 10g Salt
- 25g Custard powder
- 100g Butter
- 300ml Water
- 2 tbsp Cinnamon
- 1 Lemon zest
- 100g California Prunes
- 75g Butter
- 1 beaten egg
- 1 tbsp granulated sugar
DIRECTIONS
- Combine both flours in a mixing bowl, followed by the yeast, salt, sugar and custard powder
- Add the milk and mix with your hand to form a soft ball of dough
- Add the butter and combine before transferring the dough to a clean, lightly floured worktop and kneading for 5 to 10 minutes
- Place the dough back into the mixing bowl, cover with cling film, and leave to prove for 1 hour or until doubled in size
- Meanwhile to make the California Prune and cinnamon paste, simply place all the ingredients into a food processor and blend until smooth
- Once the dough has proved, scoop it out and knock all the air out using your hands
- Dust with a little flour and roll out into a rectangle approximately 50cm long by 20cm wide, spread the California Prune mixture onto half of the dough to approximately 1/2cm thick
- Fold the dough over the prune mixture to seal it in, then cut the dough into 2-3cm strips
- Once you have cut all the portions, the a strip of dough and wrap it around your hand until you have only 5cm left, then wrap the final piece cross ways and tuck the end in to hold it together
- Place the wrapped up dough onto a baking tray and repeat until you have all the buns ready
- Brush with a little beaten egg and sprinkle over a little granulated sugar and leave to prove for 45 minutes
- Bake in a pre heated oven at 180C for 20-25 minutes or until golden brown
